Fresh aromas of green apple and muscat grapes.
Elegant, smooth and silky mouth feel with a deep juicy, medium sweet fruitiness on the palate. A gentle bitterness creeps in to create some clean form and structure in the sake. A premium, small batch sake brewed with ultra low polished rice and very careful, manually intensive, (shizuku) drip extraction technique and tobindori bottling method.
Food matches – Scallop ceviche, caviar, prawn mousse, poached scampi, thinly sliced pearl meat or abalone shabu shabu. Poached lobster. Stracciatella (buratta, mozzarella) and fresh tomato salad, poached white asparagus. Sashimi.
Serve chilled in a tulip-shaped glass to capture the aromatics.
