Brewed at Domaine Senkin (Senkin Shuzo) in Sakura City, Tochigi Prefecture by brothers Kazuki and Masato Usui, who have a progressive style upholding their mantra of “do nothing unnecessary” and espousing the concept of Domaine or Estate use of natural resources and traditional techniques and terroir in sake. Kamosu is the most premium label from Domaine Senkin. The kanji character of Kamosu means “to brew” and in this masterful blend every step of the fermentation process is undertaken with extreme care and attention. This sake is made from an assemblage of Yamadanishiki (60%) , Kameno O (27%) and Omachi (13%) rice. The three batches of rice are fermented separately then blended together to create this fusion sake.
Rice Polishing Ratios: Each of the three rice types in the assemblage has a different polishing ratio. Yamadanishiki rice 7% / Kameno O rice 35% / Omachi rice 40%
Junmai Daiginjo Classification – not stated on the bottle as the brewery does not want drinkers to be swayed by pre-conceptions about classification and style.

Fragrant aromas of grapes, pear and white flower
Luxurious silky smoothness of texture with beautiful balance and finesse. Gives an impression of delicacy on a background of velvet richness.
Food pairings like sautéed scallops, prawn cocktail, steamed fish or chicken and seafood platters. Seafood dumplings, vermicelli salad or grilled salmon. Try with Margarita pizza and spaghetti with a basil cream sauce. Equally at home with a fresh caesar salad or classic Salad Nicoise.
Serve chilled , best suited in the 8-10 degree range temperature. Suits wine glass style stem-ware or thin walled drinking vessel to capture beautiful aromatics.
