Description
- Brewed at Ohmine Shuzō in Mine City, Yamaguchi Prefecture. In 2010 this brewery was re-opened, after half a century in the wilderness, by the grandson of the original company owner, Takeshi Akiyama. The brewery was originally established in 1822 and then forced into closure in 1955. A purpose-built, modern, minimalist brewery was opened in 2018 to brew sake with traditional techniques but with a modern vision and internationally-focused marketing support.
- Made from locally grown Yamada Nishiki Rice and pure Benten spring water.
- Rice Polishing Ratio 58%.

- Soft aromas of juicy ripe peaches, grape, white blossom and marshmallow.
- Glide into this medium-bodied sake with smooth silkiness. There is a distinctive sweet/sour flavour profile which really accentuates the accompaniment of tasty nibbles and ends with a punctuated off dry finish. This is not at all a “classic” Junmai but is a representation of how broad this category can be. This drink traverses confidently fruitiness, sweetness, sourness and acidity. An interesting and enjoyable package wrapped up in a very streamlined, minimalist bottle.
- Big ticks for this sake with seafood like sashimi, grilled prawns, steamed scallops with black bean or XO, panfried snapper. Try it with chicken stir-fried dishes, Thai green chicken curry, crumbed and baked chicken. Also good with pork belly, marinated pork ribs and veal Osso Bucco.
- Recommend serve chilled.
- Store in a cool, dark place. After opening keep refrigerated.
