Brewed at Domaine Senkin (Senkin Shuzo) in Sakura City, Tochigi Prefecture by brothers Kazuki and Masato Usui who have a progressive style upholding their mantra of “do nothing unnecessary” and espousing the concept of Domaine or Estate use of natural resources and traditional techniques.
Made from locally grown Kame no O rice. Rice vintage 2017.
Rice Polishing Ratio 50% (Kōji-mai 40%, Kake-mai 50%).
Junmai Daiginjo Classification – not stated on the bottle as the brewery does not want drinkers to be swayed by pre-conceptions about classification and style. Genshu – undiluted, Muroka – unfiltered.

Aromas of a peach orchard, ripe nectarine and apricot.
Elegant, silky mouthfeel with a perfect balance between refined sweet, juicy peach intensity and bright acidity cleaving a crisp, clean finish. A sake that will pair well with many dishes. Think stylish, refined and luxe.
Food pairings – great with creamy sauces and rich foods as the brightness and acidity seems to “cut” through and cleanse the palate. Chicken with mushroom sauce, creamy chicken pasta, Seafood gratin, lasagne and vegetarian spinach lasagne, Brie cheese, and deep fried camembert, pea and parmesan risotto, spring rolls, baked salmon with lemon sauce and pan-fried snapper.
Serve chilled and straight from the fridge. Suits wine glass style stem-ware or thin walled drinking vessel.
Store in a cool dark place and if possible keep refrigerated.
