Brewed by Niida Honke from Fukushima Prefecture. Niida Honke is a brewery focused on sustainable, organic techniques and practice an active no-waste, minimal environmental impact philosophy. The brewery grows all its own rice completely pesticide and chemical fertiliser free (shizenmai). All of the water used is from a natural spring or well water. They use natural yeast starters, no sediment removers and no lactic acid additions.
Odayaka means “calm” in Japanese and is really the mantra of the brewery. The fat and very content frog on the label symbolises the use of frogs in the rice paddy ecosystem to naturally control the pest population.
Made from locally grown organic Miyamanishiki rice and white Kōji.

In the glass honey dew melon and ripe tropical fruit dominate with a grilled peach note coming through as the sake opens in the glass.
A sake which is made with soft water and therefore is gently smooth and elegant giving the palate the taste of ripe apples and stone fruit. There is a definite nod to the steamed rice from which the sake is made and umami comes through at the drink’s end along with some clean minerality.
Food pairings such as grilled white fish, salmon and shellfish. Grilled Asparagus, Salads and vegetable gratin, Camembert cheese and fresh fruit.
Recommend serve chilled (in a wine glass to capture the aromatics)
Store in a cool, dark place. After opening keep refrigerated.
