Brewed at Mukai Shuzo by Ms. Kuniko Mukai in the town of Ine, Kyoto Prefecture.
Made from Gohyakumangoku rice (Kōji-mai) and Murasaki Akamai rice (red rice variety used for Kake-mai).
Rice Polishing Ratio 70% (Kōji) and 90% (Kake).
Genshu – no additions of water after completion of fermentation, undiluted.

Aromas of olives in brine, roasted peaches, candied fruit, salted caramel, smoked bacon, roasted corn, dashi and shoyu.
A mouthful of berry, pomegranate and dried fruit flavours which open and develop earthy and smoky tones. Beautifully integrated, really interesting umami palate that matches well with both sweet and savoury foods.
Food matches – pickled vegetables, olives and cheese, sauerkraut, labneh, hummus, smoked fish, smoked meats and charcuterie, pomegranate, braised duck, Chinese roast meats and roast duck and Korean barbecue. Dried fruit such as figs, papaya and apricots. Dark chocolate tart.
Recommend serve chilled or room temperature.
Store in a cool, dark place. After opening keep refrigerated.
