Kijoushu Classification. Kijoushu fermentation involves replacing an addition of water with sake, resulting in a sake with a high residual sugar.

Silky, smooth, luxurious mouth-feel to this vivid sake. Sweet with the intensity of a Noble Rot wine, it is strikingly clean and vivid. Nothing cloying at all about this drop just pure flavours of white chocolate, sweet berries and vanilla.
Food matches – scallop sashimi, abalone, stir-fried prawns, seared foie gras, creme brûlée, vanilla ice-cream with berries, apple strudel, poached pear, white chocolate mousse.
Serve chilled in a small tulip-shaped glass.
Store in a cool, dark place. After opening keep refrigerated.
